More S'Mores, Please


What’s not to like? Crispy graham crackers, oozy marshmallows, warm melted chocolate. S’Mores, as any kid knows, are all about summer. So, while the season lasts, gather round the fire – or microwave or oven – any heat-source will do, and follow one of the yummy recipes below. Heaven awaits.

S'Mores Traditional
4 graham crackers broken into halves
2 Hershey's Milk Chocolate Bars (1.55 oz.) broken into halves
4 marshmallows
Directions:
Place half of a Hershey bar onto a graham cracker half. Carefully toast a marshmallow over a campfire or grill. After the marshmallow is toasted, place it on top of the chocolate bar half. Top it with the second graham cracker half and gently press together.

S'Mores Indoor
4 graham crackers, broken into halves
2 Hershey's Milk Chocolate Bars (1.55 oz.) broken into halves
4 marshmallows
Directions:
Place 1 graham cracker on a paper towel; top it with a Hershey's bar half and a marshmallow. Microwave on high for 10 to 15 second, or just enough until the marshmallow begins to puff. Immediately top it with a second graham cracker half; gently press together.

S'Mores with a Twist
2 cups graham cracker crumbs
1/3 cup sugar
1/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, melted
1 pound milk chocolate
4 cups mini-marshmallows
In a bowl combine crumbs, sugar, salt, and butter, reserving 1 cup of the mixture, press the remaining mixture into the bottom of a flameproof baking dish, 13 by 9 by 2 inches. Bake the crust in a preheated 350° oven for 12 minutes, or until golden, and let it cool in the dish on a rack. In a metal bowl set over a saucepan of barely simmering water melt the chocolate, stirring, pour it over the crust spreading it evenly, and sprinkle it with the marshmallows, pressing them lightly, and the reserved crumb mixture. Broil the dessert under a preheated broiler about 2 inches from the heat for 30 seconds, or until the marshmallows are golden, let it cool completely, and cut it into squares.

S'Mores Gourmet
24 Carr's wheatmeal biscuits
1 1/4 three-ounce bars Lindt or other fine-quality bittersweet chocolate, broken into 36 pieces
12 marshmallows
Arrange 12 biscuits on twelve 8-inch square sheets of foil and arrange 3 pieces chocolate in a flat triangle on each. Toast marshmallows over flames until golden and put 1 marshmallow on top of each chocolate triangle. Top marshmallows with remaining biscuits to make sandwiches and wrap in foil. On a rack set 5 to 6 inches over glowing coals, heat S'mores 1 minute each side, or until chocolate is melted.
