just made vegeterian moussaka, just the veggies, planning on adding bechamel/cheese tomorrow...think I can leave it out overnight? just eggplant, lentils, chick peas, tomatoes...just no room in the fridge, seems like nothing would spoil...wddt?

    • I wouldn't leave a cut eggplant or tomatoe out. I think once you compromise the skin and especially once you cook it, all bets are off. (Sorry, I know that isn't the answer you wanted.)

    • I don't think it's safe to leave legumes unrefrigerated. They spoil quickly like other proteins.
